Produced from apples grown in a single orchard overlooking the North Sea in Normandy, the “This Side Up” Sparkling Cider from Cyril Zang sports a beautiful, richly golden robe that is home to a modicum of medium-sized, slowly ascending bubbles. The nose possesses a wonderful fresh earthiness. Notes of ripe apple, butterscotch and lemon rind round out the complex set of aromas. The earthy sweetness common in Normandy ciders is expressed wonderfully. Sweet ripe apple, caramel, and a hint of bitter all come together very nicely. Structurally, this cider delivers on the promise: slight effervescence and prominent but gracious and smooth tannins are the scaffolding for the leftover sugar. The finish is substantial in this one. The tendency will be to chill this down and drink, but let me urge you to let it come up to nearly room temperature. It’s there where the cider’s complexity shines and the aromas get a chance to show off. Gorgeous cider!
