Starting with a large foam, this dry sparkling cider settles into a beautiful gold liquid housing its ever-ready medium bubbles. The nose is all about a bright appley ripeness. Not over ripe. Happy ripe. Additionally its hard to miss the distinctly sweet floral, almost honeysuckle notes in the nose. No barnyard. No funk. No earth on the nose. This is happy apple cider on the nose. Structurally, the Beckhorn Hollow is a near equal parts of tannin, acid and sparkle. It is dry…100% dry. And no alcohol heat hits the palate, but rather waits until hitting the belly. Please take note of the acid and tannin balance when you taste this. It is testament to the hand of master apple blenders. Finally, the flavors here Speak to both ripe and tart apple, orange zest, quinine, and the barest hint of nutty dirt. It’s really quite an accomplishment. Most interesting is the extraordinarily juicy character that is left on the palate. Another gorgeous cider from Eve’s.
