Part of Tilted Shed’s rare and unusual “Luminous Series” of ciders, the Juniperus is made from organic heirloom apples grown in Sonoma County and aged in barrel for seven months. The cider shows off a brilliant gold coloring and, as it is with still ciders, delivers no bubbles. Out of the box a funky. well-aged apple aroma hits first. A bread and yeasty character is released along side. There is a distinctive wildness to the aromatics in this cider. On the palate the wildness is sustained but is joined by a rich spiciness of the black pepper and five-spice type. 100% dry. Tart to ripe apple flavors are stuffed in here too along with a slice of woodiness. A slight bitterness on the finish. It’s a relatively big wine that portrays a lovely balance of astringency and tartness. The 8.5% alcohol shows up in a subtle but noticeable heat. This is very distinctive cider that will remind some of the West Country English ciders. 20 Cases Produced.
