Clear and brilliant with a pure golden hue. The cider from Vermont’s Shacksbury pours with no foaming. Spicy fresh apple aromas come first with notes of molasses following along. The flavors are complex in this one with a host of earthy and woody notes orbiting around a core fresh to cooked apple flavor. Stray barnyard notes appear on the side. A beautifully structured cider with chalky tannins from start to finish that drape themselves around a lovely column of acid. The finish is medium to long in this well-built cider. A slight bit of residual sugar sweetness lingers. This is highly refreshing and complex and interesting. It’s notable that the apples that went into this cider were sourced from Vermont as well as Herefordshire in England. A beautiful cider.
