Sans bubble, brilliantly clear and enjoying a pale gold hue. Wickson is an apple that sports a decidedly tart and minerally profile and the nose on the Tilted Shed doesn’t disappoint. Unripe apple and lime aromas jump from the glass and push toward a distinctive lemony-ness. On the palate there is a ridiculously massive rush of flavors. This is substantial and serious cider. Lemon, lime, tart-unripe apple, mineral and slate all come together. Structurally, this is acid driven cider that gives a nod to some tannic structure then leads you back to the acid blanket that coats the mouth. It begs for food and when you give in, don’t hold back. Give this cider something equally profound. In the world of wine people talk about purity of flavor and authenticity when they are excited about a wine. The 2014 Tilted Shed Luminous Series Wickson can be described that way. This is profoundly good, extremely well made cider. 4 Cases produced.
