The Ember from Washington’s Alpenfire displays a beautiful, clear, richly yellow hue and throws Champagne-like tiny bubbles. The nose on the ember displays what appears to be the Alpenfire hallmark aroma: pure, authentic ripe apple. Additionally you are likely to pick up the caramel aroma that lurks as well as a faint minerality, The mouthfeel is defined by smooth and lingering, but prominent tannins that are layered over a much fainter core of acidity. Effervescence makes its appearance but can’t compete with the impact of the tannin and as well there is a very thin sheath of sugar that coats the tongue. The flavors are driven by ripe apple, bitter notes, apricot flavors, slight apple sugars and a sweet herbal note. Taken all together this is a well-built, sturdy, richly flavored cider that trades on its attractive tannic center and a fleshy ripeness in the apple aromas and flavors. Very attractive.
