Produced with a blend of Liberty and Northern Spy apples, Bellwether’s sweet cider is something that will appeal to many. Pouring with bubbles, brilliant, and sporting light gold color with green edge, the Liberty Spy begins with a sweet apple aroma and ends with a sweet apple aroma. Somewhere in between the vague hint of hot, yeasty bread shows up. The structure here is a little disappointing. More acid than one finds in the Liberty Spy is necessary to support the sweetness this cider possesses. Both acid and tannins are in short supply with only bubbles to give support for the sweet liquid. And that liquid is certainly driven by apple sugars…and primarily apple sugars alone. This is a popular style of cider. However, it would also serve well as an accompaniment to dessert.
