You can count the bubbles that fall out of the bottle into the glass along with a light golden, slightly cloudy appearance. It’s pretty. The nose offers up a grand complex of aromas: Sour apple, the Asturian acetic note, hints of nail polish, underripe pineapple, apricot. It’s really a delight to stick your nose in the glass. The Castanon is well-built too. It possesses a good kick of tannin, spot on acidity, the barest hint of effervescence and no resort to sugar to muscle it up. All this leads up to a beautiful set of flavors that slide on to the palate. Flavors of apple, apple cider vinegar, thyme, ripe lemon, and something wooden all fall together here. This is a wonderful example of Spain’s Asturian ciders. Very drinkable, complex, awaiting food and beautifully built. Imported by Rowan Imports.
