Light gold, clear and quickly bubbling with small Champagne-like orbs. Beautifully clean and linear tart to sweet green apple aromas. A slight note of alcohol on the nose. Flavors are a clean rendition of fresh, tart apple, a mineral swoosh across the palate and notes of dried fig and apricot. Only a trick of sweetness. This is a light to medium bodied cider that is built around a good bit of effervescence and a healthy balance of acid and tannin. The heat of alcohol does show up on the palate. All in all a lovely cider produced from Sonoma County-grown apples that represents the County well.
