A Normandy cider that whistles with spasmotic foam upon pouring and that quickly settles down to reveal it’s Normandy Gold appearance. Ripe apple, roses, hints of yeasty funkiness, and whispers of white pepper and cinnamon define this very clean and very complex and interesting nose. The Vergers du Cotentin’s body is built on a finely constructed set of elegant tannins that don’t shout, but are also not shy in coating the mouth. A fine sheen of apple sugar follows, along with a pinpoint core of acidity that does more to shout out its elegance. The flavors here are spectacularly pure and clean. Leading the way are ripe, but not cooked, sweet apple notes, followed by hints of pear and apricot, a dollop of bitterness and hints of the floral. The cidre’s finish is carried out to great length with the help of solid, fine elegant tannin. This is spectacular cider that is both perfectly and obviously Norman, while also being beautifully made and deserving of being served alongside an equally spectacular meal. An outstanding value!
