A whiskey barrel aged English style cider from the marvelous Liberty Ciderworks in Spokane, Washington. With its clear, burn orange coloring, a quick foaming and quick dissipation of bubbles announced this cider. The nose is a tad reticent to begin, but can’t cloak the ripe apple aromas, notes of orange peel, and sweet vanillin aromas. The palate is fairly intense with a layer of alcohol on top of ripe to over ripe apple flavors. This is bigly built cider from the pommeau-like character and dark apple notes to the sugar-grained tannin scaffolding around which the cider is built. Very slightly effervescent and long. Wood aged ciders that show their alcohol levels are not my favorite. But there is no getting around the fact that this rendition is extremely well made and suitable for any number of fairly intense food pairings.
