A light golden liquid supported by only mild carbonation hits the glass. Bright, sweet and ripe apple aromas leap out of the glass in a dominant triple gainer style. Underneath the thick blanket of ripe apple aromas one confronts slight hints of banana and pear. The palate is enlivened by moderate tannin character, a slight effervescence, the barest hint of sugar and modest acidity. This isn’t lightweight cider, but it probably should be drunk chilled. Flavors of cooked apple, a hint of funk, herbs, a dot of sweetness and a note of citrus combine nicely for a relatively complex flavor profile. A medium length finish is lifted up by the helpful astringency. This is very well made cider that, while it would benefit from a richer and bigger structure, will be wonderfully refreshing in a variety of settings.
