Sonoma Cider’s “The Hatchet”, made from organic apples, pours with a golden/dark straw hue and gives us small rising bubbles. A nice start. The nose tells me we’ve got a cleanly made, straightforward cider here with ripe apple aroma dominating. No funk, no alcohol, no brett…just apple. On the palate it’s medium-bodied, highly sparkled, and maintains a liveliness derived from an acidity that wraps around everything. A modicum of tannin astringency is here, but it’s slight. The sweet here doesn’t dominate at all, but the scoche remains in the cider. Tart apple flavor is the main player. A note of bitter is present. And again, this is very cleanly made cider, if a bit common. I like The Hatchet. It’s very refreshing. It puts the tart apple on display, and it is uncomplicated.
